Why did you decide to become a CDM, CFPP?

I have a passion for nutrition from a healthcare standpoint. Medicine is not the only best medicine for a longer life. Food and Nutrition is a form of medicine we all need to thrive and live a longer, healthier life.

What are your main responsibilities in your current position?

Some of my main responsibilities include utilizing my knowledge that I have learned and experienced throughout my career to guide and assist other CDM, CFPPs in their careers. SO, they achieve their goals for their departments and the facility.

How do you organize your time at work to make sure you accomplish all your responsibilities?

I set my days up in advance. I prioritize tasks that need the most/urgent time.

What is an example of an innovative way you have made change at your facility and how did you implement it?

Honestly, with COVID-19, that’s been a challenge recently. With all the shortages in food production and manufacturing, this has been put on the back burner.

When most facilities are back to formal fine dining, that’s when this can be accomplished.

What was your first job in the foodservice industry?

My first job in the foodservice industry was at a local burger place in my home town called Krekels, which was family-owned and operate. Krekels had the best burgers and ice-cream around town.

Who has been your biggest mentor in food service and how have they helped shape your career?

My fellow RDs!! They inspired me!!

What are the biggest challenges you face in your position and how do you handle them?

Time. There is not enough time in a day to accomplish everything. I just wipe the slate clean at the end of the day and leave work at the workplace.

What is your favorite part of your job?

Talking to the patients and residents about their favorite foods and old recipes!

How do you stay up to date with current innovations and trends?

I read articles from ANFP and Google a ton of stuff for education and know-how.

How do you envision the foodservice industry changing in the next few years?

Foodservice is a difficult industry. We all know the issues we face daily and the challenges we have. I envision the Foodservice industry as a staple to everyday life; food is always going to be needed and the nutrients we need are always changing. Food is a fun and growing industry and I love new things!

What is your advice to those just getting started in the foodservice industry?

Take it day-by-day. Listen and watch your employees. After all, most of them have been doing their jobs longer than some of us. Be a sponge - read, ask questions. Don’t beat yourself up for things that go wrong, we are all human and make mistakes.

Lastly, BREATH and EXHALE!!!
