Amy Bollam

Amy Bollam, MS, RD, LD

Amy is the VP of Products & Training at Health Technologies, Inc. In her dietetic career, Amy has focused on foodservice management including areas of cost control, staff development, safety, sanitation, and compliance. With Health Technologies, Amy provides culture change consulting for dining services in healthcare paired with customer service training, employee development, and menu design. Amy holds Bachelors degrees in Dietetics and Nutrition, as well as Women’s and Gender Studies from the University of Dayton, and a Masters degree in Human Resources from the Pennsylvania State University.

Bionca Lindsey

Bionca Lindsey, BS, CDM, CFPP, FPPS

Nutrition Care Professionals

Bionca is a consultant for Nutrition Care Professionals and a counselor for individuals involved in domestic violence situations. She is an experienced crisis line operator, shelter house manager, director of dining, and retired in the rank of Chief Master Sergeant after serving 30 years in the United States Air Force.

In her last role while in the military, she managed 14 medical treatment facilities and 4,400 enlisted personnel around the United States with an annual operating budget of $522 million. She also held the highest position in the nutrition field as the enlisted consultant to the Air Force Surgeon General on dietetics. In this position, she managed 55 nutrition departments worldwide.

She has a Bachelors degree and two Associate degrees. She is a Certified Dietary Manager, Certified Food Protection Professional, Program Manager, and Master Gardener. She is also the current President for the Alabama Association of Nutrition & Foodservice Professionals, and the Secretary and Membership Chair for the Autauga County Master Gardener Association.

Timothy Schoonmaker

Tim Schoonmaker, MBA, CEC, CCA, CDM, CFPP

Director, Nutrition Services

Timothy has worked in healthcare foodservice for 18 years in various roles such as Executive Chef, General Manager, Area General Manager, and District Manager. Timothy holds his BS & MBA degrees from Johnson & Wales University, and is a Certified Executive Chef, Certified Culinary Administrator, Certified Dietary Manager, Certified Food Protection Professional, and Foodservice Management Professional. His experience dealing with high level executives at many large hospital systems such as Baptist Health in Jacksonville, Florida, HCR ManorCare, Centra Health, and UHS, Inc. has given him experience in learning how to put the patient and resident experience at the forefront of the operation and ensure that foodservice is a key stakeholder in the individuals’ overall care and healing process. Timothy currently oversees the foodservice operations for Centra Health located in Lynchburg, Virginia.
