Amy Bollam, RDN, LD, MPS
Amy Bollam, RDN, LD, MPS is the Director of Development for Training and Support Programs at Health Technologies, Inc. In her dietetic career, Amy has focused in foodservice management including areas of cost control, staff development, safety, sanitation, and compliance. With Health Technologies, Amy provides Culture Change consulting for dining services in healthcare paired with customer service training, employee development, and menu design. She holds Bachelor degrees in Dietetics and Nutrition, and Women’s and Gender Studies from the University of Dayton, and a Master’s degree in Human Resources from the Pennsylvania State University.
Liz Friedrich, MPH, RDN, CSG, LDN, FAND
Liz Friedrich is a Registered Dietitian Nutritionist and president of Friedrich Nutrition Consulting, which provides a variety of nutrition consulting services with a focus on gerontological nutrition and nutrition care in skilled nursing facilities. She has co-authored numerous articles in journals and magazines on nutrition and aging, wound healing, and end of life care. She is an accomplished speaker on those same topics, and other subject areas relevant to older adults. Liz also serves as an expert witness in cases against long-term care facilities and registered dietitian nutritionists. In 2009 and again in 2014, Liz became Board Certified as a Specialist in Gerontological Nutrition.
Dr. Glenna McCollum, DM, MPH, RDN, FAND
Dr. McCollum served as the Past President of the Academy of Nutrition and Dietetics - the ONLY Arizona native and Arizona State University graduate to be elected to this high office in our food and nutrition profession, serving more than 80,000 members of RDNs and NDTRs nationwide. With 20+ years of experience in the field of nutrition, Glenna currently consults with selected agricultural companies who are focused on sustainability - to enhance soil health and to protect and restore the nutritional quality of crops and our food supply.
Glenna served as Director of Nutrition for Central Arizona College for 17 years and continues to serve on several community and statewide boards. She received her Doctorate in Management and Organizational Leadership from the University of Phoenix where the win-win of collaboration was the focus of her dissertation. She also received her Master’s in Public Health from Loma Linda University, and two Bachelor of Science degrees from Arizona State University. She credits Barbara Landau with her success – as Barb was her very first (and BEST) boss as a Registered Dietitian at (the then) Mesa Lutheran Hospital, following her Masters and required 6 month experience.
Suzanne Quiring, RD, CDM, CFPP
Suzanne Quiring is a Registered Dietitian both in Canada and USA. She is a member of Dietitians of Canada, Washington State Academy of Nutrition and Dietetics (AND), and Dietetics in Health Care Communities (DHCC). She is a Certified Dietary Manager, Certified Food Protection Professional with ANFP and a member of CSNM along with her 2 year Continuing Care Administrator’s diploma, and she volunteers as the BC rep for Dietitians of Canada, Gerontology Nutrition network. Suzanne has more than 23 years of experience in the health care community food industry as a Director of Food Services, Dietitian, and consultant. Suzanne has personally worked in all areas of Residential Care from Assisted living, skilled nursing care, palliative care, dementia care, brain injury, extended care, and acute care. She has an appreciation as to the practical and real challenges of providing great meal service to residents, regardless of care level.
Brenda Richardson, MA, RDN, LD, CD, FAND
Brenda Richardson is the Business Development/Relations Director for Dietary Consultants, Inc, and Food Service Management Solutions, and President of Brenda Richardson, MA, RDN, LD, CD, LLC. Brenda has more than 30 years of proven success in directing multi-million dollar foodservice and nutrition operations. Brenda is a national lecturer, author/contributing author of many professional books and publications, and serves on state and national offices in the Academy of Nutrition and Dietetics.
Barbara Thomsen, CDM, CFPP, RAC
Barbara Thomsen, CDM, CFPP, RAC, is a certified dietary manager, resident assessment coordinator with more than 20 years of experience in healthcare. She has worked in facilities, government, is a current adjunct instructor, and has held many national board positions. She has conducted numerous long-term care educational sessions across the country and currently is an Independent Health Care Consultant/Educator working with ANFP as the Education & Regulatory Outreach Consultant.
